When some Jews came to the רב of a town with questions concerning a שוחט, the רב checked him out and concluded that he was a תלמיד חכם וירא שמים and could be relied upon.  He then told those Jews that he now understands the answer to a question that had been troubling him.  “חז״ל tell us,” he said, “that ה׳ will make a סעודה for צדיקים, serving them שור ולויתן.  I always wondered why both. Wouldn’t the שור be sufficient?  Now, the answer is apparent.  There will always be צדיקים who will not rely on the שוחט and משגיח and will not want to eat the meat. The fish is for them.”
